Sunflower Cupcakes

 These dainty looking cupcakes are a sure-shot kid pleaser. They look pretty with the yellow whipped-cream petals, plus they boast of having kids’ favourite biscuit – ‘Oreo’ as a topping. So, the next time you are planning your kid’s birthday party, make sure to have these cupcakes on the menu. Kids are going to love it!

Ingredients 

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ cup oil
  • ½ cup sugar, powdered
  • ½ cup milk
  • 1 tsp vinegar
  • 1 tsp vanilla

Icing

  • 1 cup whipped cream
  • ½ tsp edible yellow color
  • 12 Oreo Cookies

Method

Step 1

Preheat the oven at 180 degree Celsius. Line a 12 hole cupcake tin.

Step 2

Mix the flour, baking powder and sugar.

Step 3

In a separate bowl, add milk, vinegar, vanilla and mix. Add oil and stir.

Step 4

Add the wet ingredients to dry ingredients and whisk to form a smooth batter.

Step 5

Pour the batter equally into the 12 cupcake holes.

Step 6

Bake in pre-heated oven for 15-18 minutes.

Step 7

Let it cool down to room temperature before proceeding for icing.

Step 8

Mix the yellow color with the whipped cream. Whisk well and fill the icing into a piping bag fitted with a large leaf nozzle tip.

Step 9

Pipe a blob of icing in the middle of the cupcake. Place an Oreo cookie in the middle. Pipe sunflower leaves around the cookie. Make 2-3 layers of the petals for the sunflower look.

Step 10

Repeat the same with rest of the cupcakes.

Step 11

Let your kid enjoy these cute cupcakes.
