Stuffed Cucumber Bites

These stuffed cucumber bites are replete with nutrition and are also high on taste. The good part is that the dish can be made in 10 minutes flat, as you just have to push in the filling in the hollowed out cucumber pieces. Perfect for busy moms like you!

Ingredients

  • 1 large cucumber

For the Stuffing

  • ¼ cup hung yoghurt
  • ¼ cup chickpeas, cooked
  • 2 tbsp coriander, chopped
  • 2 tbsp onion, chopped
  • 1 tbsp capsicum, chopped
  • 2-3 tbsp carrots, grated
  • Salt to taste
  • ¼ tsp red chili powder
  • ½ tsp roasted cumin powder
  • 1 tsp sugar

For the Garnish

  • Cherry tomato halves
  • Coriander leaves and grated carrots for garnishing
  • Lettuce leaves

Method 

Step 1

To prepare the stuffing, mix all the ingredients listed for stuffing. Make sure that the chickpeas are well coated with yoghurt. Set aside.

Step 2

Peel the cucumber and cut them into ¾ to 1 inch slices. Scoop out the seeds to get cucumber rings.

Step 3

On a plate, arrange some lettuce leaves, place the cucumber rings over it. Fill in the stuffing in the holes. Do not overfill it.

Step 4

Garnish with grated carrots, coriander leaves and cherry tomato
