This dish has some fantastic flavors and textures going into it. Cauliflower on its own is rather unimaginative. But roast it till all the edges turn brown and throw in some cheese, and you’ll have a totally different story. It is luscious enough to transform a finicky ‘i-don’t-like-vegetables-at-all’ eater into a cauliflower lover or addict. This nutty, buttery dish without the nuts and butter, is perfect when you want to push in some veggies in your kid’s diet.

- 1 head of cauliflower, cut into small florets
- 2-3 cloves of garlic, peeled and minced
- 1 tbsp lemon juice
- 30 ml olive oil
- 30 g Parmesan cheese, freshly grated
Keep the oven for pre-heating to 205 degree Celsius.
In a pan, drop in the florets, lemon juice, minced garlic and olive oil.
Mix it thoroughly and sprinkle a little salt and pepper.
Place the cauliflowers in a baking dish in a single layer. Keep it uncovered in the oven and let it bake for around 20-25 minutes, or until the top of the florets become lightly browned.
Remove the cauliflower from the oven and sprinkle freshly grated parmesan or cheddar cheese.
Serve warm as a snack or as a side-dish with the main course.
