Presenting a classic tomato, lettuce and cucumber (TLC) salad, a Mediterranean salad dish which does not take more than 5 minutes to prepare. This salad can be eaten as a mid-morning or an evening snack too. All the weight watchers-this salad is the right pick for you. Even you can involve your kids to make this salad since it’s not cumbersome at all.

Serves Preparation Time Cooking Time
2 People 5 Minutes  5-7 Minutes

Ingredients

  • 1 handful green lettuce leaves
  • 1 cucumber
  • 5 cherry tomatoes
  • 5-6 olives
  • 100g of feta cheese(optional)
  • Spring onion cut into rings(optional)

Dressing ingredients

  • 2-3 tbsp(tablespoons) White Balsamic vinegar
  • ¼ tsp(teaspoon) brown sugar
  • 2 tsp Olive oil

Method

Step 1

Rinse & spin dry the lettuce leaves.

Step 2

Blend dressing ingredients together.

Step 3

Spoon half the dressing in a bowl.

Step 4

Then place handfuls of lettuce leaves that sit on top of dressing.

Step 5

Cut the tomatoes into quarters and slice the cucumber.

Step 6

Place on the lettuce leaves.

Step 7

Cut olives and add to the mixture.

Step 8

Crumble feta over the top with sliced spring onion if you wish.

Step 9

Drizzle rest of the dressing lightly over the top of the salad.

Step 10

Season with salt and pepper.

Step 11

Enjoy!
