Cheesy Zucchini Boats

Kids are often very fussy about having veggies and chances are zucchini is among their ‘do-not-eat’ veggie list. If your kid doesn’t love eating this nutritious vegetable, here is a cool way to make them eat it. Try cheesy zucchini boats and see how fast it disappears from their plates.

 2 People 5 -10 Minutes  15 – 20 Minutes

Ingredients 

  • 1 medium zucchini
  • ¼ cup grated cheese
  • Salt and pepper to taste
  • Capsicum pieces for flags

Method

Step 1

Slice the zucchini horizontally into two. Make two pieces of each half. Using a spoon, scoop out the tender seeds part. Chop the scooped parts and mix it with 2 tbsp grated cheese. Add a tiny bit of salt and pepper.

Step 2

Fill the scooped part with the zucchini-cheese mixture and top it up with the rest of the grated cheese.

Step 3

Bake the prepared zucchini slices in an oven preheated at 200 degree celsius for 15 minutes. The zucchini should be cooked thoroughly, but should still retain its shape and the cheese must become golden.

Step 4

Garnish them with capsicum flags (see picture). Serve immediately. Enjoy!
