Ingredients

Wheat Flour (Atta) 1 cup / 136 g
Sooji (Semolina) 1 and 1/4th  tablespoon
Besan (Chickpea flour / Gram flour) ½ cup / 68 g
Methi (fenugreek leaves) small bunch
Onion chopped
Curd (thick Market curd / yoghurt) ½ cup / 68 g
Water (appx.) 3/4th cup / 102 g
Mango Powder (Amchur Powder ) 1 teaspoon
Coriander powder (Coarsely pounded) 1 teaspoon
Ajwain/ Carrom seeds 1 teaspoon
Haldi (Turmeric powder) 3/4th teaspoon
Red chilli powder 3/4th teaspoon
Salt To taste
Oil (to finish up the dough) 3/4th  tablespoon
Oil (to cook all the parathas) ½  cup / 68 g

Instructions

  1. Wash the methi leaves to clean it. Discard the stems and trim the leaves.
  2. Chop the methi leaves using a sharp knife. Set these chopped leaves aside and assemble all the ingredients and spices to make the dough.
  3. Wash the peeled onions and chop it.
  4. Take a large bowl; combine the sooji, wheat flour, chopped onion, and the besan.
  5. Mix the spices one after the other into the bowl.
  6. Finally, include the chopped methi leaves into the bowl.
  7. Add the curd and start mixing it. When it becomes very crumbly, start adding the water very slowly while working on the dough.
  8. By adding 1 tablespoon of oil, finish the dough. Make it into round and smooth balls. Set it aside by covering it with a damp cloth.
  9. Begin rolling the parathas into golf-sized balls. Roll the balls on dry wheat flour.
  10. Heat the tawa while shaping the ball on a flat platform. The rolling pin can be used to make larger circles of dough.
  11. Transfer this onto the tawa. After cooking on one side, flip the paratha. Apply oil on the side and use the spatula to cook.
  12. Apply the oil on the uncooked side and flip it. Cook until the paratha becomes fully cooked and brown.
  13. Transfer the paratha onto the plate and serve with raita.

Recipe Tips

  • When working on the dough, pour the water little by little depending on the how dense the curd is.
  • Add water very slowly when it starts binding together.
  • Avoid curd if you wish to take the parathas as a part of your travel food to prolong the shelf life.
  • Since kids do not like spicy food; chilli powder is optional in this simple besan methi paratha recipe.
