Apple Salad in Vinaigrette Dressing

In our simple, quick-whip salad, the traditional calorie-laden mayonnaise is replaced with a healthier version that is made using vinegar and honey. This dressing is tasty and refreshing with a distinct tangy flavour to it. The best part? This dressing remains good for months when kept in the fridge… but we doubt it’ll last that long.

Ingredients
- 2 apples, diced
- 1/2 cup salad oil / olive oil
- 2 tbsp vinegar
- 1/4 tsp mustard powder
- 1 tbsp honey
- 1 tbsp parsley, finely chopped
- Salt and pepper to taste
Method
For Dressing
- Mix salad oil, vinegar, mustard powder, honey, parsley, salt and pepper. Mix well and keep in fridge to cool.
For Salad
- Dice apples and toss with the above dressing. (Make sure you mix in the dressing as soon as you cut the apples. This will keep the apples from browning.)
