Masoor Dal Vegetable Curry

Many a times we make the same ol’ tur dal for lunch as well as dinner. It’s time you gave a twist to your daily menu by incorporating Masoor dal (pink lentil) into it. Preparing Masoor dal curry is very easy breezy. It can be made in about as many ways as there are cooks who make it, but we still thought of presenting it to you in our way and trust us, it would be very different from what your mother/grandma/aunt makes.

Ingredients
- 11/2 cup Masoor dal (pink lentil)
- 1 onion, chopped
- 1 bottle gourd, chopped
- 4-5 pieces drumstick
- 1 tomato, chopped
- 1/4 cup of peas
- 2 tbsp coriander, chopped
- 1 tbsp ginger garlic paste
- 1 tsp haldi
- Red chilli powder, as per taste
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1 tsp hing
- 1 tsp garam masala
- 2 tbsp tamarind paste
- 2 tbsp oil
- Salt to taste
Method
Step 1
Pressure cook masoor dal for 10-15 min and keep aside.
Step 2
In a pan, heat oil. Add cumin and mustard seeds. Once the mustard seeds splutter, add hing, curry leaves, and ginger garlic paste.
Step 3
Add onion and sauté till onion turns transparent.
Step 4
Next, add all the vegetables and sauté. Add haldi powder, red chilli powder, garam masala,tamarind paste and mix well.
Step 5
Cover and let it cook till all veggies turn soft. Then add water and masoor dal. Lastly, add salt and coriander and let your curry cook till you start getting a nice aroma of your curry.
Step 6
Garnish with coriander and serve with hot steamed rice.
