Mango Choco Chunk Muffins

Come summer, and we crave Mangoes! This sweet, juicy and fragrant fruit is undoubtedly the king of fruits. There are a number of ways to eat this fruit – eat it fresh, make smoothies, shakes, juices or use it in desserts. Today, we are going to present you yet another way – use it in baked goodies. If you have some ripe mangoes lying around, this can be a great way to use them up. We have paired mangoes with chocolate here for double treat for kids.

Ingredients

  • ½ cup maida
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 3 tbsp oil
  • 1/3 cup mango puree
  • 3 tbsp chopped chocolate
  • ¼ cup sugar

Method

Step 1

Line a 6 hole muffin tray with muffin liners. Set aside. Preheat the oven at 180 C.

Step 2

In a large bowl, sieve flour, baking powder and baking soda together.

Step 3

In a separate bowl, add the sugar and the mango puree and mix thoroughly. Add oil and whisk.

Step 4

Slowly add in the dry ingredients mixture into the wet mixture and gently mix to get a uniform batter.

Step 5

Add in the chopped chocolate and fold it in the batter.

Step 6

Tip the batter into the prepared muffin tray and bake for about 12- 15 minutes till done.

Step 7

Take it out of the oven and let it cool down to room temperature. Enjoy!
