- Get the water boiling and make sure you have everything for steaming as the dhokla will need to be steamed immediately after the fruit salt is added.
- Place a stand inside the steamer. The tray/tin/plate needs to be placed over this stand.
- In a mixing bowl add the besan and rava.
- Add the sugar and turmeric powder.
- Add the ginger-green chilli powder, oil and salt.
- Add the lemon juice.
- Add water as required and mix all ingredients properly. Make sure there are no lumps.
- Gradually add water and keep stirring until the mixture is neither too thick nor too thin. The batter should be of dropping consistency.
- Now add the fruit salt and mix in brisk motions.
- Pour the batter on the greased tray and place it on the stand in the steamer.
- Steam for fifteen minutes on a medium flame.
- After fifteen minutes, open the dish and use a fork to pierce the centre of the dhokla. If the fork comes out without any uncooked batter, then turn off the flame. If not, continue to steam for another five minutes.
- Once cooked, let is cool for a while and invert on a plate. With a sharp knife, chop the dhokla into small square pieces.
- Heat a tbsp of oil in a small pan, add the mustard seeds, hing, green chillies and sesame seeds. As the mustard seeds start spluttering, turn off the gas. After it cools for 15-20 seconds, add 1/3 cup of water to the seasoning. Now pour the tadka with the water evenly over the cut pieces of dhokla. Let the dhokla absorb all the water.
- Garnish with grated coconut and coriander.
