#MummasTouch Goes-with-Everything-Dip!
When you grow up in a family of 3 sisters, someone or the other’s always on a diet! My #mummas tip: Add a generous glug of Extra Virgin Olive Oil for a creamy almost mayo consistency without the calories!
Serves | Preparation Time | Cooking Time |
4 People | 45 Minutes | 5 Minutes |
Ingredients
- Yogurt – 400 gms or 1 Tub
- Extra Virgin Olive Oil – 30 ml
- Pepper – 1/2 tsp
- Garlic – 3 cloves, minced
- Salt – to taste
- Red chilli flakes (optional) – 1/2 tsp
- Coriander – 2 tsp, finely chopped
Method
Step 1
Empty the tub of yogurt into a clean muslin cloth (or your husband’s handkerchief, you know, the one he can’t find) and tie the ends into a knot. Hang this from a dishrack, tap or any other convenient space where you can place a dish underneath to collect the watery part that will drip, and leave for a half hour or 45 minutes, until most of the liquid has drained. Remove, untie and place this hung yogurt into a mixing bowl.
Step 2
Add the garlic, salt, fresh pepper and chilli flakes if using, and mix till just combined.
Step 3
Then add the olive oil, a little at a time, and mix gently until the mixture achieves a creamy consistency. Sprinkle the coriander on top, adjust seasoning if required and chill until needed.
Step 4
Serve this dip with freshly cut vegetables like cucumber, carrot sticks and celery, or creamcracker biscuits for a healthy, low cal snack!
