These cool looking cupcakes will bring an instant smile to your kiddo’s face. The best part? It doesn’t take much to transform an ordinary looking plain cupcake into this – just some innovative use of chocolate chips and chocolate sprinkles. Go Momma, get baking

- ½ cup +2 tbsp all-purpose flour or maida
- ½ cup sugar
- 2 tbsp cocoa powder
- ½ tsp baking soda
- ½ tsp instant coffee
- 3 tbsp oil
- 1 tsp vanilla
- 1½ tsp apple cider vinegar
- ½ cup water
For the Icing
- ½ cup icing sugar
- ¼ cup butter
For the Panda Topping
- Chocolate Chips
- Chocolate Sprinkles
- Caster Sugar
Preheat the oven at 180 degree celsius and line a 6 hole muffin tray with muffin liners.
In a large bowl, sift all the dry ingredients. Stir it well and make a hole in the center.
Add oil, vanilla and water. Whisk it to combine it all.
Lastly, add vinegar and very quickly blend it lightly. Immediately pour the batter equally in the prepared muffin tray. The batter should not fill more than half of each muffin hole.
Bake them in the preheated oven for 15-18 minutes.
When done, insert a skewer in the middle and if it comes out clean, the cupcakes are perfectly baked.
Cool them completely before proceeding for the icing.
Whisk the butter and icing sugar with a hand blender till you get a smooth white icing. Fill it in a piping bag and spread it nicely over each cupcake.
Now dip the cupcake with the icing side down in a bowl of caster sugar
With the image as the reference, use chocolate chips to make the face of the panda. For the eyes, we have piped little white chocolate onto the back of some chocolate chips followed by a dot of dark chocolate. Chocolate sprinkles are used for its mouth.
Once you have decorated the cupcakes, they are ready to serve. Enjoy!
