Coconut Cookies

When you bake these cookies, the aroma of coconut will fill your kitchen. As a mother, you would definitely want to feed your kid with homemade goodies and so these coconut cookies are something that you should definitely try your hands on. If your kid loves coconut flavour, they will definitely love it.

Ingredients

  • 1 cup all-purpose flour
  • ½ cup butter, soft
  • ½ cup powdered sugar
  • ½ cup desiccated coconut
  • ½ tsp baking powder
  • A pinch of baking soda
  • 1-2 tsp milk, if needed

Method

Step 1

Preheat the oven at 180 C and grease a cookie baking tray.

In a large bowl, sieve all-purpose flour, powdered sugar, baking powder and baking soda.

Reserve 2 tbsp desiccated coconut and add the rest into the flour mixture. Stir and add the soft butter.

Use your hands to form the dough. If it seems dry, add a teaspoon of milk.

Make 20-22 equal sized, smooth balls of the dough. Dip one side of the cookie ball in the desiccated coconut. Place them on the tray with the dry desiccated coconut side up.

Bake them in the preheated oven, for 12 to 15 minutes. When the edges start to brown and the top looks light golden it is done.

Step 7

When they cool down completely, store them in an airtight container. Serve these cookies with a glass of milk.
