Black-Eyed Bean Salad
The cow-peas or black-eyed bean is packed with potassium, fiber and iron. These are easy to digest and make a filling meal too. Just remember to retain the water you boil the peas in. You could simply drink the water or use it later while cooking.

- 1 tomato
- 1 onion
- 1 capsicum
- 1 cucumber
- 1 green chilli (slit)
- 1 tbsp lemon juice
- Salt as per taste
