Apple Fried Rice

Ingredients
- 2 cups cooked basmati rice
- 2 cloves
- 2 cardamom pods
- 1 dried red chili
- 2 tbsp oil
- 1 onion, thinly sliced
- 3 tbsp chopped cashews
- 2 tbsp raisins
- ¼ tsp cinnamon powder
- Salt to taste
- 1 tsp sugar
- ½ tsp cumin seeds
- A pinch of hing
- 1 bay leaf
- ½ cup chopped apple
Method
Step 1
Heat oil in a pan and add the bay leaf, cloves, cardamom pods, dried chili, cumin seeds, hing and sauté for a few seconds. Add the sliced onions now and cook till they look translucent.
Step 2
Add the cashews and fry them for a minute or so. Add the raisins, sugar and salt and stir. Now add the cooked and cooled basmati rice. Add the cinnamon powder and stir a little.
Step 3
Now add the apples, stir and cover. Let it cook for 3-4 minutes.
Step 4
The apples need not be thoroughly cooked – we need them to be just a bit tender.
Step 5
Check the seasoning and adjust if needed. Pack it in your kid’s lunch box with plain curd, shrikhand or raita.
