Stewed Prunes

Ingredients
- 1 to 1½ pounds large whole prunes
- 1 small lemon halved, or ½ a large one cut in half again
- 3 tablespoons maple syrup or brown sugar, to taste
- Water
Method
Step 1
Place the prunes and lemon in a cook pot over medium-high heat.
Step 2
Add maple syrup and enough water to just cover the fruit. Bring to a boil.
Step 3
Cover and simmer gently for about 30-35 minutes.
Step 4
Turn the prunes often and add water if they look too dry. The liquid will be syrupy and the prunes will have softened and swelled up when ready.
Step 5
Remove from the heat and let the prunes cool.
Step 6
Transfer to a container. You can store them in a refrigerator for up to a week, Eat them as is, or with a dollop of Greek yogurt.
