Ingredients
- 1/4 cup thinly vertically sliced red onion
- 1/2 pound ripe peaches, pitted and cut into wedges
- 1/4 pound tomatoes, cut into thick wedges
- 1/4 pound cherry tomatoes, halved
- 1 tbsp (tablespoon) sherry vinegar
- 1 1/2 tsps (teaspoons) extra-virgin olive oil
- 1 tsp honey
- 1/8 tsp salt
- 1/8 tsp freshly ground black pepper
- 1/4 cup crumbled feta cheese
- 2 tbsps small basil leaves or torn basil
Method
Step 1
Combine first 4 ingredients in a large bowl.
Step 2
Combine vinegar, olive oil, honey, salt, and pepper in a small bowl, stirring with a whisk.
Step 3
Drizzle vinegar mixture over peach mixture; toss well to coat.
Step 4
Sprinkle with cheese and basil.
