Salad with Orange Vinaigrette Dressing
Salads made from even a few ingredients make a nutrient-rich meal. The greens alone have calcium, iron, potassium and B vitamins. Many salad basics, including tomatoes, sweet peppers and the greens, are chock-full of antioxidants. Add high fiber and low calories into the mix, and you can’t go wrong with including a salad in your daily diet.

Ingredients
- 1 cup diced coloured capsicum
- 1 cup diced tomato
- 1 cup small broccoli florets
- 1 cup diced cucumber
- 1 cup diced zucchini
- 1 cup diced onion
- 2 tbsp chopped parsley
For dressing
- Juice of 1 orange
- 2 tbsp honey
- 2 tbsp vinegar
- 1 tbsp lemon juice
- 2tbsp salad oil
- 1 tsp salad seasoning
- 1 tsp freshly crushed pepper
- Salt to taste
Method
Step 1
In a bowl, mix all the ingredients of the dressing and keep aside.
Step 2
In another bowl, mix all the veggies. Now pour the dressing over the veggies n mix well. Cover the bowl with a cling wrap and keep the salad aside for 1/2 hour so that the veggies are marinated in the dressing.
Step 3
After 1/2 hour mix again and serve.
