For Coriander Pesto
- 1 cup coriander leaves
- 3-4 garlic cloves
- 3 tbsp cashew nuts
- 50 ml olive oil
- 2-3 tbsp parmesan cheese (optional)
- Salt and pepper to taste
- 8 bread slices
- 6 cheese slices, cut into strips
- 4 tbsp pesto (prepared from ingredients above)
- 3 tbsp sliced olives
- Oregano and red chili flakes for serving
First make the pesto. For that add all the ingredients listed for the pesto in a mixer jar and give it a nice whiz. You can keep the pesto chunky or as smooth as you like.
Take the bread slices and using a large cookie cutter, cut out circles of the bread.
Generously spread the prepared coriander pesto. Arrange the cheese strips as shown in the picture.
Use sliced olives for eyes. Bake them in an oven preheated at 200 C for 5-7 minutes.
Serve them warm with a sprinkling of dried oregano and red chili flakes.
