Coriander Pesto Bread Pizza

Is your kid bored of regular bread and butter? Well, its time his share of morning bread got a makeover. With the goodness of cheese and nutrition from homemade coriander pesto, your kid will gobble these down in no time. Ingredients

For Coriander Pesto

  • 1 cup coriander leaves
  • 3-4 garlic cloves
  • 3 tbsp cashew nuts
  • 50 ml olive oil
  • 2-3 tbsp parmesan cheese (optional)
  • Salt and pepper to taste

For Assembling

  • 8 bread slices
  • 6 cheese slices, cut into strips
  • 4 tbsp pesto (prepared from ingredients above)
  • 3 tbsp sliced olives
  • Oregano and red chili flakes for serving

Method

Step 1

First make the pesto. For that add all the ingredients listed for the pesto in a mixer jar and give it a nice whiz. You can keep the pesto chunky or as smooth as you like.

Step 2

Take the bread slices and using a large cookie cutter, cut out circles of the bread.

Step 3

Generously spread the prepared coriander pesto. Arrange the cheese strips as shown in the picture.

Step 4

Use sliced olives for eyes. Bake them in an oven preheated at 200 C for 5-7 minutes.

Step 5

Serve them warm with a sprinkling of dried oregano and red chili flakes.
