- Start by greasing the brinjals with little oil.
- Now roast them on an open flame till it turns soft and black. You need to roast it for 10-12 minutes and turn occasionally. Once done, keep it aside for cooling.
- Cut the stem and peel the skin with a knife or a peeler.
- Heat the ghee and add cumin seeds.
- Add finely chopped onions when the cumin seeds start to crackle. Saute for 1 minute.
- Add the ginger paste and garlic paste and sauté again on a medium flame for a few seconds.
- Now add chopped tomatoes, turmeric powder, and garam masala. Mix well, and on a medium flame, let it cook. It would help if you stirred the preparation occasionally.
- To this mixture, add roasted brinjals and salt. Mix well and let it cook for 2-3 minutes while you stir it a few times.
- Serve it when it is still lukewarm. Add coriander for garnishing.
