Ingredients:

  • Peanut butter – 1/2 cup
  • Confectioners’ sugar – 1/2 cup
  • Mini chocolate chips – 1/3 cup
  • All-purpose flour – 2 cup
  • Cocoa powder (unsweetened) – 1/4th cup
  • Granulated sugar – 3 tbsp
  • Salt (preferably kosher) – ½ tsp
  • Unsalted butter (cold) – 1/2 cups
  • Cold cream cheese – 1 package/ 8 ounce
  • White frosting
  • White sanding sugar
  • Cookie-cutter in the shape of a bat and a witch hat

Servings: 20 servings

Total Time: 3 hours 

Directions:

  1. Stir the peanut butter and confectioners’ sugar in a bowl till it is smooth to form a dough.
  2. Mix in the chocolate chips in it.
  3. Put the cocoa powder, flour, salt and granulated sugar in a food processor. Pulse 3-4 times.
  4. Add butter to the mix and pulse 2 to 3 times.
  5. To this, add cream cheese and pulse till you get a dough. Add some water if required.
  6. Divide this dough into two halves. Wrap each in plastic wrap and refrigerate for at least 1 hour.
  7. Preheat the oven to 350 degrees F.
  8. Line baking trays (tow) with parchment paper.
  9. Roll the dough to about 1/8 inch thick.
  10. Then cut the dough with cookie cutters.
  11. If you do not have the cutters, you can use a knife and cut the cookies in the shapes you can.
  12. Place half of the shapes on the baking sheet with some distance between them.
  13. Spoon some peanut butter filling in the centre of the shapes. Brush the edges with a bit of water.
  14. Then place the matching cookie on top of them. Then crimp the edges with the help of a fork.
  15. Bake for 9-10 minutes. Then transfer to wire racks to cool.
  16. Fill a ziptop bag with white frosting. Cut a small hole at the end and with this make eyes on the bat cookies and lines on the witch hat.
  17. Sprinkle the cookies with sanding sugar.

  • Orange and green food colouring
  • Candy corn
  • Black and red liquorice laces
  • Pumpkin shape cookie cutter

Servings: 8 to 10 cookies 

Total Time:  9 hours 30 minutes 

Directions:

  1. Take the flour, baking powder and salt in a bowl and whisk together.
  2. Take another bowl, add butter and shortenings and beat them using an electric beater.
  3. Add sugar to it and beat it till it’s light.
  4. Add egg, 1 teaspoon vanilla extract and beat some more.
  5. Add flour gradually and mix till the dough is formed.
  6. Take a zip-lock bag and place the dough in it.
  7. Roll the dough in the bag in quarter-inch thickness.
  8. Refrigerate for 3 hours at least.
  9. Preheat the oven to 375 degrees.
  10. Open the zip lock bag by cutting the sides and peeling the plastic away.
  11. Cut the dough with pumpkin shape cookie cutter.
  12. Place the cookies on baking trays.
  13. Bake till they are golden brown for about 12-14 minutes.
  14. Let them cool.
  15. To make the icing, take a bowl and add some butter, milk and 1½ teaspoon vanilla extract. Add confectioners’ sugar and whisk.
  16. Transfer 1/4th of the icing to a bowl.
  17. Add some green colour to it. Mix well.
  18. Add orange colour to the remaining icing and mix.
  19. Make the pumpkin stem with green icing with the help of a spoon.

Directions:

  1. Preheat the oven to 350°F, put the 9-inch square baking pan, lined with parchment paper.
  2. For the crust, take a bowl, and add finely crumbled cookies, nuts, and sugar. Mix together and then add butter. After mixing the butter, press the batter evenly into the preheated pan.
  3. Bake the crust for 12 minutes, then transfer the pan to a wire rack.
  4. For the filling, you can combine cream cheese, eggs, and sugar per quantity. 
  5. Add flour and salt to it. Take 1/4th of the mixture aside and add pumpkin puree and pumpkin pie spice to the remaining mixture.
  6. Pour the mixture with the pumpkin spice and puree onto the cooled crust.
  7. Pour the cream cheese mixture you set aside earlier on top of the pumpkin mixture, and then swirl the mixture with a spoon or knife to give it a marble-like look.
  8. Bake the batter for the next 30-34 minutes, transfer the baked one to the wire rack and let it cool. You can refrigerate the cake for two hours and cut the cake into rectangular slices.
