Ingredients
- 1 cup water
- 1 cup milk
- 1 cup rice grains
- ½ cup Cheddar cheese, shredded
- 2 tbsp butter, softened
- 3 spring onions, finely chopped
- 2 eggs
- 1 cup dry plain crumb
- Oil for frying
- Salt to taste
- Black Pepper to taste
Method
Step 1
Mix water and milk, and bring it to a full boil. Stir in rice and cover with a lid.
Step 2
Reduce the flame to low and allow the rice to cook undisturbed, until all the liquid gets absorbed and the rice gets tender. This will take around 15 minutes. Switch off the gas and let it stand for 4 – 5 mins.
Step 3
Remove the lid and fluff rice with a fork or a spoon. Next, transfer it to a large bowl and add cheese, butter, spring onions, salt and pepper. Keep stirring until the cheese gets melted.
Step 4
Next, stir in the eggs and mix until combined well.
Step 5
Meanwhile in another bowl, mix bread crumbs, a little salt and a pinch of pepper.
Step 6
Work in small batches – take a tablespoonful of the rice mixture and drop it in the bread crumbs. Roll to coat and remove excess.
Step 7
Heat oil in a heavy-bottomed kadhai over moderately high heat. After about 2 – 3 mins when the oil gets relatively hot, drop the fritters and fry them, stirring occasionally, until golden.
Step 8
Remove and transfer to paper towels for the escess oil to drain.
Step 9
Serve hot with tomato ketchup or mint chutney
