Palak Mint Pulao for Fussy Toddlers

It can be difficult to find a healthy and tasty recipe to serve to your fussy toddler. So I am going to share my yummy and healthy one-pot palak mint pulao recipe with you. If you have a fussy toddler at home, you are going to want to share this one!

Ingredients

  • Basmati rice – 1cup
  • Ghee- one teaspoon
  • One small onion
  • Freshly prepared ginger garlic paste – 1/4th teaspoon
  • Chopped mix vegetables (I used capsicum, peas, carrot, paneer, potato) – half cup
  • Palak leaves – 10
  • Mint leaves – 5-6
  • One Clove
  • One small cinnamon piece
  • One small star anise
  • Jeera one teaspoon
  • 2-3 black peppers
  • Pinch of haldi
  • Water 2 cups
  • Salt as required

Method

  • Wash basmati rice properly and keep it aside
  • Prepare a paste of palak and mint with very little water.
  • In a pressure cooker heat ghee and add clove, cinnamon, star anise and black pepper fry for a minute.
  • Now add jeera and fry till it becomes aromatic.
  • Now add chopped onions and ginger garlic paste, saute for 2-3 minutes
  • Then add half, all chopped vegetables, rice and palak mint paste saute for 2minutes.
  • Add salt as required and pressure cook it for 2-3 whistels.

Serve hot with raita!
