Instructions

1. Start by steaming the spinach. Once done, let it cool and make a puree. The quantity should be one cup.

2. Now take the soaked mungdal and blend it along with ginger, oil, and curd to make a semi coarse paste.

3. Take both the batters and mix it well.

4. After this, add baking soda, salt, and lemon juice and mix well. Let it rest for 10-15 minutes.

5. Alongside, grease the steamer plates with oil and fill the steamer with water.

6. Take the batter stir it again and pour the batter in the steamer. 

7. Steam on a high for 15-20 minutes. 

8. Remove the dhokla from the steamer and let it cool for a good 10-15 minutes. 

9. Heat oil in a pan and add mustard seeds and curry leaves. Please turn off the heat once it starts to crackle. Here you should add three tablespoons of water to this.

10. Pour this on your mungdal spinach dhokla. 

11. Cut the dhokla into pieces and garnish it with chopped coriander leaves before serving.
