You can probably prefer to change the form of the food as such which is not much of liking for the child , such as make vegetable soups, or also can make puree and add it to your dough for roti, puri , dosa, idli etc or even rice as well

Your child is five years old child is smart enough to understand what you are saying you to make your child understand benefits of having vegetables importance of vegetables and how it is associated with overall development and growth you have to find different varieties and variations to offer to the child to learn to accept vegetables there is no trick to it it is just only about understanding and making your child understand the importance of the things those are there
