you can add spinach / beetroot puree to make green / red roti, make mix veggies paratha / roti, add grated / chopped veggies in pancake, chilla, idli, dosa, dhokla, rice , daliya, veg upma, veg poha, etc. you can also include veggies as stir fried veggies or soup bowl.
try to include variety fresh and seasonal veggies for wholesome nutrition

please make different dishes for your child with vegetable like soup upma daliya khchdi biryani idli dhokla dhosa pawbhaji aloo paratha mix veg paratha with cheese etc
please include natural probiotics and dairy products and green leaf veggies and fresh fruit and different seeds and nuts in your child daily diet
