Sheer khurma
Sheer khurma is a Mughlai dish prepared especially during the festivals of Eid and Ramzan. Sheer khurma means ‘sweetened milk with dates’ and as the name suggests, it is a rich pudding prepared with nuts, dry fruits, milk and ghee. Try this simple and traditional recipe at home and enjoy a sweet day with your family.

Ingredients
- 3 cups milk
- 1/2 cup vermicelli
- 2 tbsp sugar
- 1 tbsp ghee
- 8 cashew nuts, chopped
- 8 almonds, chopped
- 8 pistachios, chopped
- 5 seedless dates, chopped
- 1/2 tsp chironji or charoli
- 1 tbsp raisins
- 1/2 tsp cardamom powder
- 1/2 tsp rose water
- 1/2 tsp saffron
Method
Step 1
Heat 1 tsp of ghee in a pan. Add vermicelli and roast it until it turns golden. Keep this aside.
Step 2
To the same pan add the remaining ghee, chopped nuts and dry fruits. Saute for about 2 – 3 min.
Step 3
In the meantime, boil milk in another pan until it reduces to half or gets thickened.
Step 4
Add vermicelli and sugar into boiling milk. Stir occasionally on a low flame. Cook until the vermicelli turns soft.
Step 5
Add the nuts and dry fruit mixture to it and keep stirring for another half a minute.
Step 6
Add cardamom powder and rose water. Mix well and switch off the flame.
Step 7
Garnish it with saffrons strands and serve hot or chilled.
