Rajma Corn Sandwich
This sandwich is an epitome of deliciousness and health. Made with whole wheat slices, it is rich in fibre. Rajma and corn ensures that it is replete with protein. It is an ideal recipe for your kid’s lunchbox. Here is how you can make it.

Ingredients
- 6 slices of whole wheat bread
- 1 tbsp oil
- ½ cup rajma, boiled
- ¼ cup sweet corn
- 3 tbsp onions, chopped
- 1 small tomato, chopped
- 1-2 green chillis, minced
- 1 tsp ginger, grated
- ½ tsp chaat masala
- ¼ tsp red chili powder
- ½ tsp roasted cumin powder
- A pinch of black salt
- Salt to taste
- 3 tbsp cheese, grated
- 2 tbsp butter
- 3 tbsp ketchup
Method
Step 1
Heat oil in a pan. Add green chilli, grated ginger and chopped onions. Sauté for 1-2 minutes.
Step 2
Add tomatoes and salt and cook for 2-3 minutes. Now add the rajma, corn and spices. Cook for 5-7 minutes. The rajma should be cooked through and flavoured nicely.
Step 3
Spread ketchup on one side of each bread. Spread the rajma filling on it. Sprinkle grated cheese over it. Cover it with the ketchup side down. Repeat the process with the rest of the breads and filling.
Step 4
Spread butter on the outer side of each sandwich. Grill the sandwich in a hot toaster.
Step 5
Pack it into your kid’s lunch box along with some ketchup and mix salad.
