Tri-Colour Layered Pasta

Ingredients
3 cups boiled pasta (any shape is fine)
For the Spinach Sauce
- 1 cup spinach puree
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ¼ cup cream
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tbsp sugar
- Salt and pepper to taste
For the Tomato Sauce
- 3/4 cup tomato puree
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp red chilli flakes
- 3-4 tbsp basil, finely chopped
- 1 tsp dried Italian herbs
- 1 tbsp olive oil
- 1 tbsp butter
- 2 tbsp sugar
- 3-4 tbsp tomato ketchup
- Salt & pepper to taste
For the White Sauce
- 2 tbsp Maida
- 2 tbsp butter
- 2 tbsp cream
- ½ cup milk
- ¼ cup water
- 2-3 tbsp cheese
- 1 tbsp sugar
- Salt and pepper to taste
- Butter to grease
- ½ grated cheese for topping
Method
Step 1
To prepare the spinach sauce, heat a pan. Add the butter and olive oil in a pan. Add the chopped onion and garlic. Sauté for a minute.
Step 2
Add the spinach puree, along with the cream. Stir well. Add in the sugar, salt and pepper and let it come to a boil. When it looks cooked, add 1 cup of cooked pasta. Stir so that the pasta is covered in the spinach sauce. Take it off the flame and keep aside.
Step 3
Heat a pan and add the butter and olive oil. Add the chopped onion, garlic and sauté it for a minute. Now add the tomato puree and stir. Add in the rest of the ingredients and let it come to a boil. Check for seasoning.
Step 4
Add 1 cup of pasta to it. Stir such that the pasta is covered in the tomato sauce. Take it off the flame and keep it aside.
Step 5
Now let’s get started with the white sauce. Heat a pan and add the butter to it. When melted, add the maida and cook it for 2-3 minutes. Now add the milk while stirring continuously.
Step 6
Stirring is important, else lumps will get formed. Add in the cream, cheese, sugar and seasoning and let it cook for 4-5 minutes. The sauce will get thick.
Step 7
Now add the cooked pasta and stir well to coat the pasta in the sauce. Take it off the flame.
Step 8
Now take a baking dish and grease it with butter. First add the pasta in green spinach sauce, followed by the pasta in tomato sauce and lastly layer with the pasta in white sauce.
Step 9
Sprinkle half a cup of grated cheese over the top and baking it in a preheated oven for about 20 minutes at 180 degree C.
Step 10
When done, take it out of the oven. Let it sit for 5 mins and serve. Enjoy!
