1. Baby Sushi

Ingredients
- Sushi rice (200 g)
- Water (375 ml)
- Rice wine vinegar (3 tbs)
- Sugar (1 tsp)
- Nori seaweed (6 sheets)
- Carrot sticks (1 cup)
- Cooked beef (about 150 g or more if needed)
- Cucumber slices or sticks (1 cup)
- Soy sauce (to serve)
- Sliced avocado (1 cup)
- Pickled ginger (to serve)

Method
- In a saucepan, mix the water and the rice, cover, and let it boil. Bring the heat to a simmer and let it boil for 10 minutes. Then remove the heat completely and keep it covered for 10 more minutes.
- Place the rice into a container and leave it to cool. Sprinkle sugar and vinegar and stir the rice thoroughly.
- Cut a nori sheet in half using scissors and place the shiny side down on a bamboo mat. Keep some rice on this sheet and with wet fingers, press it down till it reaches a thickness of 0.5 cm. Leave about 1 cm on one end. It will help you roll the sushi.
- Place the fillings (cooked beef, carrot sticks, sliced avocado) on the top and begin rolling it from one end tightly. Wet the strip at the other end and push it gently to seal the sheet.
- Make sushi rolls from the rest of the sheets.
- Slice the rolls into a few pieces with a wet, sharp knife. Place the pieces on a serving platter and cover them with plastic wrap. Refrigerate the sushi for around 30 to 60 minutes to allow the nori to soften. Serve it with pickled ginger and soy sauce.
2. Veggie Sushi

- English cucumber (1)
- Carrot (1, shredded and peeled)
- Raisins (1/4 cup)
- Cream cheese (1/2 cup)

- Use a peeler to slice 8 long slices of the English Cucumber.
- Place small amounts of the shredded carrots at one end of the cucumber slices.

- Mango (1, thinly sliced)
- Carrot (1, peeled and julienned)
- Cucumber (1, thinly sliced)
- Cooked beets (1/2 cup, thinly sliced)

Method
- Combine 4 cups of water with the sushi rice, cover it with a tight-fitting lid and bring it to boil. Lower the heat to simmer and let the rice sit for 10 more minutes. Turn off the heat, and leave the rice aside (covered) for 10 more minutes.
- While the rice cooks, you can slice the other ingredients into thin strips.
- Once the rice is cooked, stir it in some rice vinegar, and allow it to cool down in a bowl.
- Take a nori sheet on the bamboo mat. Place a small amount of rice onto the sheet, and pat it into a thin layer with wet hands.
- Place the fillings in line to fill a quarter area from the bottom of the rolling sheet. The slices must be placed in a sequence of rainbow colours.
- Roll the sheet tightly and finally cut it into pieces with a wet knife. Serve immediately with pickled ginger and soy sauce.
4. Candy Sushi

Ingredients
- Margarine or butter (1 – ½ tbsp)
- Marshmallows (20)
- Crisp rice cereal (3 cups)
- Fruit chewy snack sheets (10)
- Bite-size chewy fruit snacks (40)

Method
- In a large microwaveable bowl, microwave the butter on High for 45 seconds or until it melts.
- Add in the marshmallows and mix until they are coated with the butter. Microwave the bowl for around 2 minutes or until all the marshmallows melt. Blend the mix well.
- Once done, stir in the cereal and mix well.
- Unroll the fruit snack sheets and press 3 tablespoons of the cereal mixture on each fruit sheet leaving around half an inch off of one edge.
- Place 3 or 4 chewy fruit snacks down the centre of the sheet and roll each sheet tightly.
- Finally, cut the rolls into smaller pieces and enjoy the snack!
5. Chocolate Peanut Butter Banana Sushi

Ingredients
- Bananas (4)
- Smooth peanut butter (1/2 cup)
- Crisp rice cereal (1 cup)
- Nuts (1/4 cup, chopped)
- Mini chocolate chips (1/4 cup)

Method
- Heat the peanut butter in a shallow dish for 30 seconds so that its consistency is smooth enough to spread easily. If you children are allergic to peanut, then you could go for butter made from any other nuts or even sunflower butter.
- Then, take another shallow dish and combine the chocolate chips, cereal, and nuts.
- Dip each banana into the melted peanut butter and ensure it is coated completely using a spoon, if necessary. Make sure the banana is firm enough to dip into the peanut butter without falling apart.
- Next, coat each peanut butter-coated banana with a mixture of cereal, nuts, and chocolate chips. You can get creative with the ingredients here. Instead of using only nuts and chocolates, you could also go for crushed pistachios, candies like toffee bars or M&Ms, or almonds.
- Then, transfer these into a plate and allow the bananas to set up in the freezer for 5 minutes or in the fridge for 20 minutes.
- Finally, slice these into 2 or 3 slices depending on the length of the banana, and then serve!
6. Cucumber and Tuna Sushi

Ingredients
- Telegraph cucumber (1)
- Avocado (1/2)
- Mayonnaise (1 tbsp)
- Cooked rice (1 cup)
- Canned tuna (80 grams)
- Lemon juice (squeezed)

Method
- Wash the cucumber thoroughly and peel it with a peeler (peeling is optional).
- Make a tunnel through the cucumber. If you are using an apple corer, then you can widen the hole by passing the corer a few times through the cucumber.
- In a bowl, mash the mayonnaise, avocado, and lemon juice. Drain the tinned tuna and mix it well with the rice.
- Then take enough amount of rice mixture and fill the cucumber tunnel such that it stays packed inside. You can use wet hands while pushing the rice mixture into the tunnel to ensure it stays packed.
- Finally, slice the filled cucumber roll into thick slices of around 2 cm and then serve.
7. Sandwich Sushi

Ingredients
- Whole grain bread (1 slice)
- Mustard (1/4 tsp)
- Mayonnaise (1/4 tsp)
- Cucumber stick (1, thin)
- Cheese stick (1)
- Turkey lunchmeat (2 slices)
- Carrot stick (1, thin)
Total Cooking Time: 10 minutes

Method
- Trim cut the bread slice and roll it into a thin rectangle using a rolling pin.
- Place the thin bread slice with the short side facing you and spread the mustard and mayonnaise over it, leaving around an inch from the top.
- Place the turkey slice on top of the mayonnaise spread and ensure that the inch of space at the top still remains free.
- Place the cucumber stick and the carrot stick at the bottom end of the turkey slice.
- Slice the cheese stick in half and place it beside the cucumber and the carrot sticks. You could even use a small piece of cheddar or mozzarella cheese, depending on what your children like.
- Starting from the bottom of the bread slice, begin to roll the bread tightly, ensuring that the cheese, cucumber, and carrot sticks remain packed inside the roll.
- Once you have rolled the bread completely, give it a gentle squeeze and press along the seam of the bread to seal the edge.
- Using a sharp knife, cut the sandwich roll into smaller ones, and enjoy your little sandwich sushi with your children!
