Penne Pasta in Curry Sauce
Pasta is usually made the Italian way, full of cream and cheese, but have you ever thought of pasta in an Indian curry style? Yes! We have made pasta in ‘desi’ style with all Indian spices. Serve it to your teenyboppers and watch them go bonkers over this indulgent brunch-time dish. This recipe is also a quick and cost-effective way to feed the whole family in one go.

Ingredients
For the Curry Sauce
- 1 cup tomatoes, diced
- ½ cup milk
- 1 tsp sugar
- 1 tsp butter
- Salt and pepper to taste
For the Curry Paste
- 1 medium onion
- 3-4 cloves garlic
- 2 tsp coriander seeds
- 1 tsp cumin seeds
- 2” ginger, deskinned
- ¼ tsp turmeric powder
- 1 green chilli
- 3 red chillies
- 2 tbsp coriander leaves
- Salt to taste
Others
- 2 cups cooked penne pasta
- Coriander leaves for garnishing
Method
Step 1
Boil tomatoes with 1 cup water and salt, till fully cooked. Pass the tomatoes through a sieve with the water to make a puree.
Step 2
Grind together all the ingredients for the curry paste.
Step 3
Heat clarified butter in a non stick pan. Add the curry paste and fry for 3-4 minutes. Add the tomato puree, milk, a little water, salt, pepper, sugar and boil the sauce for 5 minutes.
Step 4
In the end, add penne and boil for another 5 minutes. Adjust the salt and pepper.
Step 5
Garnish with fresh coriander leaves and serve.
