How to Tell If a Mango Is Raw or Ripe?

1. Raw Mango Rice

Ingredients

  • Cooked rice- 2 cups
  • Oil- 1 ½ teaspoon
  • ½ teaspoon of mustard seeds
  • ½ teaspoon channa dal
  • Urad dal- 1 teaspoon
  • 1 tablespoon of peanuts
  • Curry leaves-few
  • Dries red chillies- 2
  • Ginger paste- freshly minces, 1 teaspoon
  • Green chillies- 2, slit
  • Turmeric powder- ¼ teaspoon
  • Grated mango- 1 cup
  • Grated coconut- 2 tablespoons
  • Salt as per taste

How to Make

  • Pressure cook rice and set aside.
  • Wash, peel, and grate the mango.
  • Heat oil and add mustard seeds in a pan. Add peanuts and channa dal and stir.
  • Add urad dal and stir again.
  • Mix in dry red chillies, curry leaves and ginger paste.
  • Now add turmeric and hing.
  • Mix in the grated mango and salt.
  • Add coconut and stir before adding rice. Stir gently so as to not break the grains of rice.
  • Once thoroughly mixed, turn off the flame.
  • Serve with pickle or chutney.

2. Kacche Aam Ka Salad

Here is a simple raw mango recipe without fire that can be made in a few minutes.

  • Raw mango- ½ cup, juliennes
  • Carrot- ½ cup, juliennes
  • Cucumber- ½ cup cubes

  • Chaat masala– 1 teaspoon

How to Make

  • Salt- A pinch
  • Ghee– 1 teaspoon

Seasoning

  • Asafoetida– A pinch
  • Salt- A pinch

How to Make

  • Dice or grate mangoes and set aside.
  • Melt the jaggery in ¼ cup of water and skim off the impurities.
  • Cook the mangoes in ½ cup of water until tender.
  • Boil the jaggery water for a few minutes and add the mango.
  • Mix in salt and cook till the jaggery turns thick.
  • Prepare the tempering with mustard, ghee, hing, salt, and red chillies.
  • Pour over the mango pachadi and serve warm.

  • 1 teaspoon cumin seeds

  • 2 tablespoon gram flour
  • ½ teaspoon turmeric

How to Make

  • Heat mustard oil until smoking.
  • Add all the seeds and splutter.
  • Add tej patta and sauté.
  • Now mix in the turmeric, hing, chilli powder, coriander powder, gram flour and mix thoroughly.
  • Add raw mango with ½ cup water and let it cook.
  • Mix in the salt and simmer for about 10 minutes.
  • Now add jaggery and cook till jaggery melts in.
  • Transfer to a serving dish and garnish with coriander leaves.

6. Aam Ki Kadhi

This is a traditional kaccha aam recipe made with gram flour and curd.

  • 2 tablespoons of vegetable oil
  • 1 teaspoon of mustard seeds
  • ¼  teaspoon of fenugreek seeds

  • 4 dry red chillies
  • ½  cup raw mango, cubed
  • ½ cup besan
  • 4 cups of water
  • Salt

For Tempering

  • 2 tablespoon of ghee
  • 10-12 curry leaves
  • 1 teaspoon of red chilli powder

How to Make

  • Heat oil and add mustard, fenugreek, hing, cumin, red chillies and curry leaves. Let it become aromatic and crackle in a few seconds.
  • Now add raw mango cubes and cook until mango is soft.
  • Whisk up the besan with water and bring to batter consistency.
  • Add the besan batter to the mangoes and add salt and turmeric to it.
  • Cook well for 20 minutes.
  • Heat a spoon of ghee and add the tempering ingredients to it . Pour over the kadhi and serve with hot rice.

7. Aam Ki Launji

This one of our favourite raw mango sweet recipes which is actually like a sweet and sour chutney that goes well with roti and rice.

  • Raw mango-900 grams, peeled and diced
  • Vegetable oil- 3 tablespoons
  • 2 teaspoons of a mix of fennel, cumin, fenugreek, mustard, and onion seeds

  • ½ teaspoon each chilli powder and garam masala
  • Salt
  • Sugar- ½ teaspoon
  • Water-1/2 cup

  • Add the panch phoran to hot oil in a sauce pan and bring to a splutter.
  • Add the diced mangoes and cook until soft.
  • Add the turmeric, chilli, and garam masala powder and cook well.
  • Now add sugar and water and cover with a lid.
  • Cook on medium heat for 10 minutes.
  • After 10 minutes increase the flame a bit and bring the mix to a thick chutney-like consistency.
  • Cool and store in the refrigerator. Serve with roti or rice.

  • Wash, peel, and dice mangoes.

  • Add tadka to dal and mix.
  • Dilute with water if required. Serve with rice and ghee.
