1. Onion Raita

Ingredients:

  • Thick curd, 1 cup
  • Chopped onions, ½ cup
  • Salt
  • Green chillies, 2
  • Coriander leaves, finely chopped

Preparation Time: One minute

Total Cooking Time: Five minutes

Method:

  • Add salt to the yoghurt and mix well.
  • Add in the rest of the ingredients and mix.

  • Tomatoes, ¼  cup, deseeded, chopped

  • Mint leaves, 15 leaves
  • Ginger, about ½ to an inch according to taste
  • Cumin powder, ½ teaspoon

  • Add the salt to the curd and whisk till it is smooth.
  • Take the mint leaves and the ginger and crush the two together to release the juices.

Tempering:

  • Vegetable oil, 1 teaspoon
  • Cumin seeds, ½ teaspoon
  • Mustard seeds, ½ teaspoon
  • Dry red chillies, 2
  • Curry leaves, a few sprigs

Preparation Time: 5 minutes

Total Cooking Time: 15 minutes

  • Beat the curd till it is of smooth consistency.
  • Heat some oil and add cumin seeds.
  • Once they have been crackling for a few seconds, add the green chillies along with spinach to the pan.
  • Cook covered for about five minutes.
  • Remove from flame and allow the spinach to cool down.
  • Add the spinach with cumin powder, black pepper powder and salt to the curd and mix.
  • To make the tempering, heat oil and then add the cumin and mustard seeds, dry red chillies and curry leaves.

  • Lauki, 1 cup, grated
  • Oil, 2 teaspoons
  • Cumin seeds, 1 teaspoon
  • Asafoetida, 1/8 teaspoon
  • Whole red chillies, 2
  • Ginger, 1 teaspoon, finely chopped
  • Green chillies,1 teaspoon, finely chopped
  • Coriander, 3 tablespoons, finely chopped

  • Mix the milk and curd together till you have a consistency that resembles pancake batter.
