1. Spinach or Palak Raita
Usually this recipe is eaten as a side dish. It not only comes with numerous health benefits, but it also can be whipped up in no time!
Ingredients
- 500 grams curd
- 2 cups spinach leaves, finely chopped
- 1 green chilli, finely chopped
- 1 tsp cumin powder
- ½ tsp black pepper powder
- Salt to taste
- ½ cup of water

Total Cooking Time: 15 to 20 minutes

Method
- Take a microwave-safe dish, add water and spinach and cook for 3 to 4 minutes or until the spinach leaves become tender. Strain the leaves and let them cool.

- Add blanched spinach leaves and mix well.

- 1 kg curd
- 2 cups dhooli urad dal

- Oil for deep frying

- Soak both the dals in water for 4 to 5 hours.
- Take the dal and churn it into a thick batter consistency by adding a little water.

- Take the batter in small amounts and deep fry until they turn golden.

- 2-3 tbsp curry leaves
- ¼ tsp asafoetida
- 1 tbsp oil
- 1 tablespoon coriander leaves, chopped

- Pressure cook rice with water for one whistle.
- Open the cooker, mash the rice.

- ½ cup of water
- Oil for frying
For the Kadi:
- ½ kg curd
- ¾ cup besan
- 2 cups of water
- 3-4 dried red chillies
- ½ tsp fenugreek seeds
- 1 tsp chilli powder
- 1 tsp turmeric powder
- 2 tbsp curry leaves
- 1 onion, sliced
- 5-6 garlic cloves, chopped
- ¼ tsp hing
- 2 tablespoon fresh coriander leaves, chopped
- 2 tbsp oil
Preparation Time: 15 to 20 minutes

Method
- Take besan in a bowl; add chopped potatoes, onions, green chillies, ginger, red chilli powder, baking powder and water to make a thick batter.
- Heat oil in a wok. Put the batter in small quantities and fry until it turns golden and crispy. Keep the pakodas aside.
- Heat 2 tbsp oil in a separate pan. Add some curry leaves, red chillies, and fenugreek seeds. Sauté for a few seconds.
- Add garlic and onions, cook for a minute.
- Add all the dry spices and cook for a minute.

- 2 cups curd
- 2 cups bhindi, chopped
- 2 onions, sliced

- 1 tsp coriander powder

- 1 tsp mustard seeds
- 2 tablespoons curry leaves
- 2-3 green chillies, chopped
- 4 tbsp oil

- Heat 2 tbsp oil in a pan and sauté onions for a few minutes.
