  • Rice, 350 grams, parboiled
  • Chana dal, 90 gram, husked and split
  • Fenugreek (methi) seeds, ½ tsp
  • Salt, ½ teaspoon
  • Oil

How to Make:

  • Soak dal, rice and methi for around five to six hours.
  • Grid into a paste by adding water and salt.
  • Heat a tawa and drizzle oil over it.
  • When the pan gets heated up, sprinkle some water on it.
  • Now pour one cup of batter onto it.
  • When the edges begin to turn brown, pour oil around the uttapam and turn.
  • Let the other side also become brown.
  • Serve hot.

2. Poha

One of the easiest recipes you can make for brunch, poha is delicious too! Here is how to make it.

Ingredients:

  • Poha, 1 cup
  • Oil, 1 tablespoon
  • Hing, 1/8 teaspoon
  • Mustard seeds, 1 teaspoon
  • Onions, ½ cup finely chopped
  • Curry leaves, 10
  • Whole red chillies, 3
  • Potatoes, ½ cup, diced
  • Green chillies, 1 teaspoon, diced
  • Lemon juice, 1 tablespoon
  • Coriander leaves, 1 tablespoon, finely chopped
  • Turmeric, ½ teaspoon
  • Salt
  • Lemon wedges

How to Make:

  • Put the poha in a sieve and wash it. Don’t leave the poha in water for too long.
  • Sauté the mustard seeds, hing, curry leaves, whole red chillies and mustard seeds.
  • When the onions start to turn brown, add the potatoes and continue to sauté.
  • Add turmeric and cook until potatoes are soft.
  • Turn up the heat, add some salt and then mix in the poha.
  • Once everything is mixed and cooked, take it off the heat and add lemon juice, coriander and green chillies.

Ingredients:

  • Wheat flour, 2 cups
  • Potatoes, 4, boiled and mashed
  • Green chillies, 2, finely chopped
  • Red chilli powder, ¼ teaspoon
  • Garam masala powder, ½ teaspoon
  • Dry mango powder, ½ teaspoon
  • Coriander leaves, 3 tablespoons, finely chopped
  • Salt
  • Oil

How to Make:

  • Add the spices to the mashed potatoes and mix well.
  • Take two small circles of dough and roll them out well. Try to make them of the same size.
  • Place some of the potato stuffing on one of the discs and spread well. Leave an inch from the edges bare.
  • Place the other rolled disc on top of this one and press the edges well to seal the stuffing in.
  • Dust some flour on the dough and roll to a normal chapatti size.
  • Fry on both sides with oil.
  • Once cooked, serve with tomato chutney or green chilli pickles.

  • Onion, 1, finely chopped

  • Add mustard seeds and curry leaves to hot oil in a wok.

  • Semolina (rawa), 250 grams
  • Water, 650 grams
  • Ghee, 75 grams

  • Black gram (kala chana), 2 grams

  • Green chillies, 5 grams, sliced
  • Cashew nuts, 25 grams

  • Set water to boil.

Ingredients:

  • White bread, 4 slices
  • Mashed potatoes, 1 ½ cup
  • Coriander, a few stalks

  • Cumin seeds, ½ teaspoon
  • Salt
  • Mango powder, ½ teaspoon

  • Beat the eggs and set aside.
  • In a pan, heat oil and add the curry leaves and mustard seeds.
  • Once they begin to pop, add the green chillies and sauté everything well.
  • Fry onions for a minute before adding the tomatoes.
  • Add the turmeric and chilli powder and then salt.
  • Let this cook for a few minutes on low flame.
  • Keep mixing it well and once the oil separates, add the eggs.

  • Eggs, 9
  • Chicken mince, 1 cup
  • Oil, 1 tablespoon
  • Baking powder, 1/8 teaspoon
  • Onion, 1, finely chopped
  • Ginger-garlic paste, 1 tablespoon
  • Maida, 1 cup
  • Tomatoes, 2, finely chopped
  • Green chillies, 2, finely chopped
  • Turmeric powder, a pinch
  • Salt to taste
  • Red chilli powder, 1 1/2 teaspoons
  • Garam masala powder, 1/2 teaspoon
  • Coriander for garnishing

How to Make:

  • Mix 1 egg, maida, salt, oil and baking powder in a bowl. Add 1/4 cup of water and knead into soft dough.
  • Divide the dough into 4 equal portions.
  • Roll them out into 8-inch square rotis.
  • Heat oil in a pan. Add onions and fry till one minute.
  • Break remaining eggs in a separate bowl and mix well.
  • Add ginger-garlic paste and saute for one minute.
  • Add chicken mince and cook for two minutes.
  • Add tomatoes, green chillis, turmeric powder, red chilli powder, and salt and mix well.
  • Add 3/4th cup water and garam masala powder and cook till mixture is dry.
  • Heat a tawa. Cook rotis for two minutes on each side.
  • Pour some beaten egg on top and cook for one minute.
  • Place a portion of the cooked chicken mixture in the centre, fold the sides to make a square.
  • Flip and cook till both sides turn golden brown.

9. Onion Paratha

Ingredients:

  • Wheat flour, 2 cups
  • Turmeric, ¼ teaspoon
  • Green chillis, 2, sliced
  • Coriander leaves, one cup, chopped
  • Oil, ½ cup
  • Onions, 2, finely chopped
  • Red chilli powder, ¼ teaspoon
  • Coriander powder, ¼ teaspoon
  • Salt

How to Make:

  • Mix all the ingredients into the flour and form into dough.
  • Cover and keep aside for 15-20 minutes.
  • Chop the onions and green chillis and keep aside. This is for the filling.
  • Take out small balls and then roll those out one by one into flat circular discs of 3-4 inch diameter.
  • Add the chopped onions and chillis in the centre.
  • Sprinkle red chilli powder, coriander powder and salt.
  • Bring together all edges of the dough and press downwards.
  • Sprinkle more flour and roll to a paratha of 6-8 inches diameter.
  • Fry on a tawa till both sides are cooked.
  • Serve hot with yoghurt or pickle.

10. Idli

Idlis can be had with chutney, sambar and crisp vadas.

Ingredients:

  • Idli rice, 1 cup
  • Urad dal, 1/2 cup
  • Cold water, 1 cup
  • Fenugreek seeds, ½ teaspoon
  • Salt

How to Make:

  •  Wash the dal and the rice separately.
  •  Soak separately for about six hours
  •  Soak the fenugreek seeds with the dal.
  •   Drain water and then grind using a wet grinder, using water when needed.
  •   Let the batter ferment for another six to twelve hours in a cool and dry place.
  •   Boil some water in an idli steamer or in a pressure cooker.
  •   Grease the idli moulds and then gently mix the batter a bit.
  •    Fill the moulds and place inside the steamer or cooker once the water is boiling.
  •    Steam for 10 minutes. The flame should be medium-high.
  •    Remove the idlis once they are cool.
