Ingredients
- 1 cup khuskhus
- 1 and 1/2 cups boiling water
- 1 tbsp olive oil
- 2 – 3 spring onions, chopped
- 1 bell pepper
- 1/2 cucumber, cut as cubes
- 2 tomatoes
- 2 olives, sliced as rings
- 1 tbsp cilantro, chopped
- 2 – 3 green chillies
- 1 tbsp walnuts, chopped
- Lemon juice to taste
- Salt to taste
- Pepper to taste
Method
Step 1
In a bowl, take khuskhus and boiling water. Mix well and keep aside for 15 – 20 min.
Step 2
Mix with a fork to ensure there are no lumps formed.
Step 3
Add all the other ingredients and mix well. Add pepper, salt and lemon juice to taste.
Step 4
Keep in the refrigerator for about 30 min and serve chilled.
