  • Always buy prawns from reliable and trusted sources. Ensure that they are thick and glossy; do not buy discoloured prawns or ones with shrunken eyes.

  • If you don’t have an option of fresh prawn, opt for good quality frozen ones and defrost them before cooking.
  • Ensure that they are cleaned properly before cooking. You may cook them with or without the shell. Cooking with veins or deveining them is a personal preference.
  • Clean and cook them thoroughly. Signs of well-cooked prawns include a red shell and pearly white or opaque flesh. You can soak them in a bowl of lukewarm salted water for about 10 minutes and wash them well.

  • 1 tbsp olive oil
  • Garlic (1x clove)
  • 300g prawns (cooked, peeled)
  • 3 tsp lemon juice (or lime juice)
  • 1 tbsp parsley, chopped

How to Make

  1. Take a tablespoon of olive oil in a frying pan.
  2. Add crushed garlic clove and stir fry for one minute.
  3. Add prawns, a good squeeze of lemon juice and a tablespoon of chopped parsley to it.
  4. Let it cook for three minutes and serve.

2. Prawn Stir Fry

Ingredients

  • 1 onion, sliced
  • 100g mangetout
  • Garlic (1x clove), finely chopped
  • 3 spring onions, chopped
  • 100g bean sprouts
  • 100g cooked king prawns
  • 2 tsp vegetable oil
  • 6 tbsp water

How to Make

  1. Heat up the pan with vegetable oil and add onion and fry for three minutes.
  2. Add garlic, water, mangetout and bean sprouts to eat and fry for another three minutes.
  3. Add prawns to the pan along with spring onion and cook for three minutes more.
  4. Serve with rice.

3. Prawn Tempura

Ingredients

  • 225g king prawns
  • 50g corn flour
  • 75g plain flour
  • 5g baking powder
  • Soda water
  • Olive oil

How to Make

  1. To make the batter, combine the cornflour, plain flour and baking powder in a bowl.
  2. Add a trickle of cold soda water to the batter and keep adding the water while mixing the ingredients until you have a smooth batter.
  3. Take some olive oil in a pan and heat it.
  4. Dip the prawns in the prepared batter and put them in the hot oil.
  5. Let them fry for about five minutes before taking them out.
  6. Repeat until all the prawns are ready.
  7. Serve.

4. Prawn, Mango and Avocado Salad

Ingredients

  • 2 ripe avocados
  • 2 ripe mangoes
  • 400g large cooked and peeled king prawns
  • 6 tbsp chilli and lime dressing
  • 2 tbsp roughly chopped coriander
  • 1 x 170g bag of mixed spinach, rocket and watercress
