Easter Chocolate Muffins Recipe

Trust us when we say that kids would love digging into these yummy Easter chocolate muffins with mini candy eggs on them. They are really super cute to look at and qualify as the perfect teatime treat to have with your family and friends over a get-together. You’ll be amused to watch them come back for more. You just have to take a bow lady, as your dish will have scored big at the gathering.

Ingredients

  • 275 gm plain flour
  • 100 gm caster sugar
  • 50 gm cocoa powder
  • 10 gm baking powder
  • 100 gm butter, melted
  • 300 ml milk
  • 2 large eggs, beaten
  • 5 ml vanilla essence

For the Icing

  • 225 gm icing sugar, sifted
  • 100 gm butter, softened
  • 2 tbsp cocoa powder
  • 2 tbsp hot water

Method 

Step 1

Preheat the oven to 200 degree Celsius. Line up a 12 hole muffin tin with muffin cases.

Step 2

To make the muffins, mix flour, sugar, cocoa powder and baking powder into a large bowl. Now, add butter, milk, eggs and vanilla and beat the flour mixture.

Step 3

Transfer the mixture into the muffin tray and bake for about 20 – 25 minutes or until risen and firm to the touch.

Step 4

Cool on a wire rack for about 10 mins.

Step 5

To decorate the muffins, beat icing sugar and butter together.

Step 6

Next, blend the cocoa powder and a little water to a smooth paste and beat into the above butter mix.

Step 7

Decorate the muffins as shown in the image and sprinkle a few candy easter eggs.
