Chocolate Fig and Banana Pancakes
Pancakes are as indispensable to westerners, as rotis and dosas are to us in India. Why not incorporate this foreign dish into the ‘desi’ menu by altering it a little. They can be served with a dollop of honey, a blob of butter and a scoop of fresh jam, or they can form the base for other desserts or savoury preparations. Ingredients
- 1 cup plain flour
- 2 tbsp sugar
- 2 tbsp almond powder
- 1 tsp baking powder
- 1/2 teaspoon salt
- ¼ cup milk
- 2 fig purée (you can also use dried fig which is soaked in milk for 2-3 hrs and then purée it)
Method
Step 1
Sift the flour, sugar, baking powder and salt into a large bowl. Add milk, almond powder and fig purée. Stir well so that no lumps remain. Keep the batter aside and let it rest for 1 hour.
Step 2
After an hour spread on a non stick pan and make small pancakes. Roast nicely from both sides like a dosa.
Step 3
Serve with chocolate sauce and banana (you can use any seasonal fruit like strawberry or mango )
Step 4
You can also serve it with vanilla ice-cream.
